Vegan Sausage + Cauliflower Soup

Made with fresh cauliflower & Easy to make!  This vegan sausage and cauliflower soup is so easy to make, and your friends and family will not be able to resist it.

Cooking is always fun with family and friends.  So set a date in the calendar and start cooking together.

Vegan Sausage + Cauliflower Soup

Serves 4

INGREDIENTS

7oz  Vegan Sausage (I use ½ of Lightlife Gimme Lean Plant-Based Ground Sausage 14oz.) 
2 T   Vegetable Oil  DIVIDED
¼ c   Organic All-Purpose Flour
5 c   Vegetable Broth (I use Trader Joe’s Single Packets)
1   Cauliflower Head (cleaned, trimmed, bite sized pieces)
½ c  Vegan Half and Half
4 oz  Vegan Cheddar Cheese (I use Go Veggie Vegan Cheddar Shreds 7oz. Packet, a little more than ½ a bag)
2  Green Onions (cleaned, trimmed, and thinly slice)

TOOLS

Large pot or Dutch oven
Chef knife
Cutting board
Whisk
Soup ladle

DIRECTIONS

1 |  Gather, clean and prepare all ingredients before getting started. 

2 |  In a large pot over low – medium heat, add 1 tablespoon vegetable oil and sausage, separating into bite sized pieces.  

3 |  Cook for 5 minutes or until brown and crispy.  

4 |  Remove the sausage from the pot and place on a paper towel.

5 |  Using the same pot over low – medium heat, add 1 tablespoon of vegetable oil and flour. 

6 |  Whisk together, than add vegetable broth while you continue whisking to remove any lumps.  

7 |  Add cauliflower and simmer until tender, about 20 minutes. 

8 | Stir in half and half. 

9 |  Place in bowls and top with sausage, cheddar cheese and green onion.  

To serve: Serve hot with cornbread or your favorite bread.  Enjoy!

*You may use any type of vegetable broth (homemade, canned, boxed, etc.), I use whichever is available in my kitchen at the time.
