Vegan Sausage + Roasted Sweet Pepper Panzanella
Serves: 4
INGREDIENTS
2 red bell peppers
2 yellow bell peppers
2 orange bell peppers
1 package vegan hot italian sausages I use the brand “Beyond Sausage – Hot Italian”
6 T olive oil DIVIDED
1/2 loaf ciabatta bread torn into 2 inch pieces
DRESSING INGREDIENTS
4 T extra olive oil
1 T red wine vinegar
1/2 T fresh lemon juice
1 T oregano
2 garlic cloves minced
1/2 t crushed red pepper
8 oz vegan mozzarella cheese torn into bite size pieces
1/4 C fresh mint leaves torn into small pieces

long tongs for grilling

DIRECTIONS:
- Gather, clean and prepare all ingredients before getting started.
- Heat outdoor grill.
- In a large bowl, toss sweet peppers with 2 tablespoon of olive oil.
- Using long tongs for grilling, place the sweet peppers directly onto the grill.
- Grill for 12 minutes turning sweet peppers often until blackened and blistering on all sides.
- Carefully remove the sweet peppers from the grill and place them into a large bowl, cover with plastic wrap, set aside.
- Now, in a medium bowl, using your hand, toss torn ciabatta bread pieces with 4 tablespoons of olive oil and season with sea salt and cracked pepper.
- Place the pieces of bread on a rimmed baking sheet.
- Carefully place the baking sheet directly on the grill and close the bbq cover for 10 minutes, tossing occasionally.
- Remove bread, when toasted on the outside – set aside until cool.
- Next place your vegan sausage onto the grill and cook per packaging instructions. Once fully cooked, remove from the grill using tongs and place on a plate lined with a paper towel – once cooled, slice sausages into bite size pieces.
- Remove sweet peppers from the bowl and peel the skin, remove stem and seeds.
- Cut the sweet peppers into long strips.
- In a small bowl, whisk dressing ingredients together the red wine vinegar, lemon juice, oregano, garlic, and crushed red pepper.
- Add sweet pepper slices, vegan sausage, grilled toasted bread, sliced red onions to your large serving bowl and toss with the dressing. Tear pieces of vegan mozzarella cheese and mint leaves into the bowl.
To serve: This is a great family style dish served as a main dish or share at a potluck BBQ. Enjoy!
*Tip: Do not add dressing until ready to serve, this will prevent sogginess.
**For a vegetarian meal, substitute vegan mozzarella for fresh mozzarella.
***I prefer using organic or home garden produce when available.
